Mother's Day Ideas

I thought it would be fun to give some good ideas to have a wonderful Mother's Day, since I am a mom of two beautiful little girls, I think I know what Mom's like. Easy, Cute, and Fun!
Fruit and Mother's Day to me fit perfectly together!

Every Sunday our family always makes a yummy and somewhat big breakfast. I LOVE breakfast so this Mother's Day it wont be any different. I am going to share a few favorite breakfast meals.

First: My Homemade Waffles
(They turn out so light and fluffy)

What You Will Need:
1 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons sugar
1 egg
1 cup milk
2 tablespoons oil

Preheat waffle iron. In a bowl combine, flour, baking powder, salt and sugar. In another bowl mix egg, milk and oil. Add flour mixture and stir until moistened.

Easy Brown Sugar Topping
(makes the waffles that much more delicious!)

What You Will Need:
2 tablespoons brown sugar
1/4 cup sour cream
strawberries
whipped cream

Combine, brown sugar and sour cream. Mix well. Drizzle over waffles and top with fresh strawberries and a little whipped cream... can you say YUM??

Second: Overnight French Toast
(Good for the Mom's that still have to make breakfast, at least its done by morning!)
I found this recipe from Mormon Mavens

What You Will Need:
1 loaf of your preferred bread, sourdough is one that works great
(can't be just regular bread it will by too soggy!)
8 eggs
2 cups milk
1/2 cup heavy cream
3/4 cups sugar
2 tablespoons vanilla

Topping:
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1 tsp. cinnamon
1/4 tsp. salt
1 stick cold butter, cut into pieces

Preheat oven to 350*
Grease a 9x13 pan with butter. Tear bread into bite-size chunks and place evenly in the pan.
Mix together the eggs, milk, cream, sugar, and vanilla. Pour evenly over bread. Cover tightly and store in the fridge for several hours, or overnight.
In a medium bowl mix together the flour, brown sugar, cinnamon, and salt. Cut in the butter so it is crumbly (like small pebbles). Place in a Ziploc bag and put in fridge.
When you are ready to bake, take the pan and bag out of the fridge. Sprinkle the crumb mixture over the top. Bake for 1 hour.

Third: Copycat Starbucks Smoothie
(So Refreshing)

What You Will Need:
6-8 strawberries, washed with greens removed
 kiwi, ripe with skin removed
1 (6 oz.) low fat strawberry yogurt
1 tablespoon agave
1 1/2 cup crushed ice

Combined in blender until smooth, and your done!

Next, whether you are having breakfast, brunch, lunch or dinner make it look nice. I am all about presentation... So I did some researching (Pinterest of course) and found some bright, colorful, and
fun ideas.

I can't forget a dessert so try this.
Strawberry Cooled Layered Cake

What You Will Need:

3 lbs. fresh strawberries, sliced
2 (8 oz.) tubs whipped topping
1 (14.4 oz.) box graham crackers
1/4 cup milk chocolate chips

Spread a small amount of whipped topping on the bottom of a 9x13-inch baking pan. Place 5 graham cracker sheets down the middle and break 2 more sheets into crackers to fit down the sides. Cover the top of the graham crackers with more whipped topping and then a layer of sliced strawberries. Repeat three times, until you have four layers of graham crackers. You'll end with a layer of strawberries on top. Place milk chocolate chips in a plastic bag. Microwave in 10 second intervals until melted.
Snip the end of the plastic bag and drizzle chocolate over top of cake.
Refrigerate covered for at least four hours, or until the crackers have softened completely.
Enjoy!
